Vinificazione del Covela Reserva Branco Wine 2016: Vendemmia manuale, organizzata per appezzamenti di vigneto per garantire la raccolta al momento giusto. Trasportare l'uva in piccole cassette per evitare la schiacciatura. Selezione manuale dei grappoli. Macerazione pellicolare a freddo. Diraspatura totale seguita da pressatura soffice. Fermentazione spontanea in botti di rovere provenienti da boschi austriaci e francesi. Affinamento su fecce totali, con batonage periodici. Nessuna stabilizzazione o filtrazione.
Paglierino brillante con riflessi agrumati
Attacco untuoso. Acidità equilibrata che dona grande personalità alla degustazione. Minerale. Finale lungo, elegante e croccante
Intenso, profondo e complesso. Note di fiori bianchi come tiglio e caprifoglio, frutti di alberi come pere, albicocche e prugne bianche. Leggere note speziate
