Vinificazione del Carm CM rosso: diraspatura, pigiatura soffice e shock termico, seguita da macerazione pre-fermentativa in tino a freddo per 12-24 ore. Fermentazione in vasche larghe basse per 10 giorni a 24-26ºC. Fermentazione malolattica completata in botti di legno. Invecchiamento in inox e botti americane/francesi.
