Situato a sud della città di Ancas, nel comune di Anadia, nella zona privilegiata di Figueira da Costa. Vinificazione dello Spumante Sidónio de Sousa Special Cuvée Brut: le uve vengono scaricate nella pressa a membrana, dove viene estratto il mosto lacrimale senza pressatura. Il mosto viene raffreddato per 24 ore, decantato e trasferito in vasche di acciaio inox dove fermenta, con controllo della temperatura. Dopo la fermentazione, il vino decanta naturalmente in vasca, venendo pulito a fine anno, quando è preparato per imbottigliare vino spumante, con lieviti liberi. Le bottiglie di spumante vanno in cantina per effettuare la seconda fermentazione in bottiglia a temperatura controllata e in assenza di luce. Dopo la fermentazione, le bottiglie rimangono in cantina, affinando fino alla rimacinazione e alla sboccatura senza aggiunta di zucchero , a quel punto il prodotto è pronto per la commercializzazione.
