Vinificazione dello Spumante Quintas de Melgaço Reserva Bruto: Pressatura delicata e decantazione a freddo da 12 a 36 ore a una temperatura controllata tra 12ºC-16ºC. Fermentazione fino a 15 giorni con controllo della temperatura tra 16ºC-18ºC. A questo vino base fine e aromatico vengono aggiunti lieviti e un liquore di tiraggio, fermentando in bottiglia per 12 mesi a una temperatura controllata tra 10ºC-12ºC. Affinamento in vasche di acciaio inox con temperatura controllata e rimozione regolare dei lieviti per 3-6 mesi. Fermentazione per 12 mesi in bottiglia prima del dégorgement.
