Vinificazione del Vino Quinta do Monte Xisto: Le uve sono state vendemmiate a mano all'inizio di settembre e trasportate in cantina in casse da 20 kg. Sono state vinificate in lagari con pigiatura a piedi. La fermentazione si è sviluppata per 6 giorni nel lagar con lieviti indigeni. È seguito un affinamento di 18 mesi in botti da 600 litri.
