Vinificazione del Vino Quinta das Bageiras Pai Abel Tinto: poiché le uve di questo vino provengono da un appezzamento con due vitigni mescolati, cercando di replicare il tipo di piantagione di una vigna centenaria. Anche con questo obiettivo, e attraverso l'esposizione nella vigna, la produzione è stata limitata a due o tre grappoli per ceppo. Come uve dei due vitigni, raccolte allo stesso tempo e senza diraspatura, fermentano circa una settimana in tino aperto. Nel corso di questo tempo, sono stati effettuati rimontaggi con masse di legno, più volte al giorno, fino a quando il vino ha raggiunto l'intensità corretta. Infine, il vino ha terminato la fermentazione in botti usate di rovere francese dove ha affinato. Successivamente è stato trasferito in una piccola botte di legno dove è rimasto fino all'imbottigliamento senza alcuna chiarifica o filtrazione.
