Le uve Pinot Nero provengono da Quinta de Nápoles, da un appezzamento piantato all'inizio del millennio, che dal 2018 è in modalità di produzione biologica certificata. Le uve vengono scelte in vigna per poter raccogliere i grappoli che si trovano in un perfetto stato di maturazione e sanità, confezionati in cassette da 20 kg, posti direttamente in vasca di acciaio inox, a grappolo intero, dove vengono calpestati e fermentano spontaneamente e a temperatura controllata. Dopo la fermentazione alcolica in acciaio inox, la fermentazione malolattica viene svolta in botti, dove matura per circa 16 mesi.
