Favaios 1989 è il tipo di vino che viene prodotto solo nelle annate in cui le uve dimostrano una qualità eccezionale. Dopo un'attenta selezione delle migliori uve Favaios, queste sono state macerate e fermentate come tradizionalmente nella regione. La fermentazione alcolica è molto breve, e subito dopo la risalita del mantello, la maggior parte del mosto viene dissanguato e viene applicata l'acquavite. Una piccola parte del mosto, però, continua a fermentare e macerare con le bucce ancora per qualche giorno e solo successivamente questo mosto, molto ricco aromaticamente, viene invecchiato. Il primo e il secondo mosto vengono poi miscelati e conservati in antichissime botti di legno e invecchiano lentamente, migliorandone il bouquet nel corso di decenni. EDIZIONE LIMITATA
In termini di sapore, il vino mostra la dolcezza tipica del Moscatel de Favaios, molto ben bilanciata dall'acidità caratteristica dell'altopiano.
Presenta aromi caratteristici della varietà come l'arancia e il mandarino. È molto marcato anche dagli aromi di miele, uva passa, fichi secchi e caramello che gli conferiscono grande complessità.
