Lo spumante brut Real Companhia Velha è il risultato di una selezione accurata di Pinot Noir e Chardonnay provenienti essenzialmente dalla Quinta de Cidrô a São João da Pesqueira, mentre una parte del Pinot viene raccolta nella Quinta do Casal da Granja sull'altopiano di Alijó. Il terroir di Cidrô, grazie alla sua altitudine e al clima mite, consente un ciclo più lungo della vite, permettendo così che sia il Pinot Noir che lo Chardonnay possano essere vendemmiati al momento perfetto per essere spumantizzati. Questa splendida Quinta, sebbene situata a 550 m di altitudine, dispone di un terreno povero, scistoso, che si traduce in produzioni minori, conferendo a questo spumante un'eccellente texture, volume e acidità. Nell'altopiano di Alijó, nella Quinta do Casal da Granja, i terreni più ricchi e il clima ancora più fresco producono vini più freschi e aromatici. Attraverso una diradatura mirata, per preservare un alto livello di acidità naturale delle uve, vengono raccolti i grappoli più verdi che vengono vinificati in piccole vasche di acciaio inox come basi per i blend finali.
