Questo magnifico Gevrey Chambertin è opera di Arnaud Mortet, che ha assunto la gestione del domaine dopo la morte di suo padre Denis nel 2006. I Mortet hanno una fantastica reputazione in Borgogna, grazie allo stretto rapporto di Denis con il leggendario enologo Henri Jayer, che ha servito come suo mentore per molti anni. Oggi Arnaud porta avanti l'eredità di suo padre e non smette mai di impegnarsi per migliorare la qualità dei suoi straordinari vini Gevrey Chambertin. Il terreno Premier Cru di Lavaux Saint-Jacques è situato su un ripido pendio esposto a sud, che aiuta a garantire che le viti ricevano molto sole caldo durante la stagione di crescita. Le temperature notturne sono molto più fresche, permettendo alle viti di riposare e ai frutti di conservare molta freschezza e aromi. Le viti coltivate qui hanno un'età media di 60 anni e producono acini piccoli e concentrati che aggiungono aromi di frutta intensi e complessi alla cuvée finale. Dopo essere stati raccolti a mano, i frutti vengono accuratamente selezionati e fatti fermentare con lievito selvatico. Il vino giovane matura in botti di rovere nuove al 70% per 18 mesi prima dell'imbottigliamento. Questo aiuta ad ammorbidire i tannini, creando un palato vellutato con note di frutta rossa brillante bilanciate da sentori di legno affumicato e tostato. Grazie alla sua complessità e potenza, questo è un ottimo Borgogna da conservare per un altro decennio o due, anche se ora può essere gustato anche con anatra arrosto o piatti di selvaggina locale come la faraona o il fagiano.
