Vinificazione del Vino Castello D'Alba Limited Edition 2020: Vendemmia 100% manuale, per tini con capacità media di 800 Kg. Diraspatura e pigiatura; Macerazione a freddo per 48 ore; Fermentazione alcolica per un minimo di 15 giorni con controllo della temperatura. Fermentazione malolattica a temperatura controllata di 18ºC per 15 giorni. Invecchiamento per 18 mesi in botti di rovere francese, 2/3 nuove, 1/3 di secondo vino.
Lungo ed avvolgente, si sente il frutto in fondo alla bocca, tannini decisi, molto maturi e morbidi, fresco e molto elegante, che lasciano intravedere un ottimo affinamento in bottiglia.
Aroma molto concentrato, con frutti di bosco neri, note di liquirizia, spezie, viola, bergamotto, cisto... in equilibrio con note di botte francese molto eleganti
