Quinta dos Carvalhais Colheita Branco è un vino bianco del Dão di qualità eccezionale, massimo esempio di eleganza e ricchezza. Erede dei saperi antichi, Quinta dos Carvalhais unisce esperienza e innovazione per creare vini molto eleganti, con sapori di intensa delicatezza e la personalità unica della regione. Il Gouveio e l'Encruzado sono stati vendemmiati separatamente. Le uve sono state scaricate da cassette da 20 Kg direttamente nel diraspapigiatore. Dopo la pressatura, il mosto è stato sottoposto a decantazione statica. È stato poi posto in vasche di acciaio inox, dove sono stati aggiunti lieviti autoctoni. Parte del mosto, il 10% dell'Encruzado, ha fermentato in botti di rovere francese usate, mentre il resto è rimasto nella vasca di acciaio inox. Il Gouveio ha fermentato in vasca di acciaio inox. La fermentazione è avvenuta a 18ºC, per un periodo di circa 20 giorni. Di questo vino, il 10% dell'Encruzado ha fermentato e affinato per circa 6 mesi in botti da 225L di rovere francese usato. La restante parte del lotto (90%) ha fermentato e affinato in vasca di acciaio inox. L'unione del vino da botte con il vino da vasca ha contribuito a ottenere un maggiore equilibrio nel lotto finale tra il vino e le componenti aromatiche proprie del legno.
