Durante la vinificazione, c'è una macerazione delle bucce per 12 ore, seguita da fermentazione alcolica a 16ºC, utilizzando solo il mosto lágrima più puro. Il Bacalhoa Bical Bairrada Clássico Branco 2021 è prodotto esclusivamente con uve del vitigno Bical. Fermentiamo il 60% del vino in barrique di rovere francese nuove e di 1 anno, effettuando battonage (rimescolamento delle fecce fini per incrementare la struttura gustativa del vino) per 6 mesi. Il vino è invecchiato per 12 mesi in bottiglia.
