Melgaço, la regione più a nord del Portogallo, è protetta da un insieme di catene montuose che permettono un matrimonio perfetto tra la piovosità, la temperatura e il numero di ore di sole necessari alla migliore maturazione delle uve della varietà Alvarinho. Questa caratteristica climatica durante la maturazione è spesso associata al microclima di Monção e Melgaço, che alterna giorni caldi a notti fredde, permettendo il mantenimento di aromi freschi e fruttati con un'acidità presente, ma moderata, proprio nello stile che definiamo per il Soalheiro. Vinificazione del Vinho Verde Alvarinho Soalheiro: Le uve, esclusivamente della varietà Alvarinho, sono raccolte manualmente in cassette di piccola capacità e trasportate alla cantina in breve tempo. Dopo la pressatura, il mosto ottenuto decanta per 48 ore, segue la fermentazione a temperatura controllata, utilizzando lieviti preselezionati per l'effetto. L'imbottigliamento avviene dopo la stabilizzazione del vino, seguito da un affinamento in bottiglia. La vinificazione dell'Alvarinho Soalheiro è indirizzata a ottenere un vino che concentri la qualità delle uve e permetta una buona evoluzione dopo l'imbottigliamento.
