Vinificazione: Raccolte a mano nel loro punto ottimale, le uve vengono diraspate, pigiati e vinificate secondo un processo che si basa su una attenta macerazione con estrazione di colore, tannini e aromi dalle bucce, completato da rimontaggi permanenti durante la fermentazione. Questa avviene in lagari, a una temperatura controllata tra i 28-30ºC, fino a raggiungere il grado Baumé desiderato. In questa fase, si procede all'aggiunta di acquavite (beneficio), dando origine a un vino fortificato. Invecchiamento: La natura ci regala anni speciali. Distinta di anno in anno, frutto di condizioni particolari, ogni Vendemmia della Cálem dà origine a vini unici, di carattere eccezionale e qualità premium. La Cálem invecchia tutti i Porti Vendemmia per un periodo minimo di 10 anni e imbottiglia solo in base alle esigenze di mercato, mantenendo tutto il restante vino a evolvere in legno guadagnando, con ciò, una complessità singolare.

Tono intenso
Corposo e intenso in bocca, mostra sapori di frutta ben matura, combinati con un tannino ancora giovane e alcune note di frutta secca. Finale di bocca intenso e lungo.
Al naso presenta note di gelatina di frutta, combinate con note di prugna e uva passa e leggeri accenni di spezie, come la noce moscata.
