Alla Quinta da Boavista, per garantire la preservazione delle caratteristiche del vitigno e il controllo totale del processo produttivo, ci avvaliamo della vendemmia manuale e della selezione manuale dei grappoli, seguite da una diraspatura e da una leggera pigiatura delle bacche. La fermentazione delle uve avviene in botti nuove di legno francese da 500 litri. Dopo un periodo di macerazione, il vino risultante continua il suo affinamento per 16 mesi in botti da 225 litri anch'esse di rovere francese. Tutti i vini sono tappati con sughero naturale. Non essendo filtrati né stabilizzati a freddo, possono dare origine a un deposito con l'età. Un vino che ci conquista per l'eleganza e la vibrante grazia.
