Vinificazione del Vino Tinto Esporao Private Collection 2019: ogni varietà è stata vinificata e invecchiata separatamente. Syrah e Aragonez vengono fermentati in piccoli lagares di acciaio inox, con follature alternate a brevi rimontaggi manuali effettuati da 2 a 3 volte al giorno, a seconda della degustazione giornaliera durante tutta la fermentazione. L'Alicante Bouschet fermenta in piccole vasche di acciaio inox, con rimontaggi manuali. In questo modo, e data la buccia relativamente fragile dell'uva, si evita un'eccessiva estrazione di tannini derivante dalla calpestio dei piedi. Dopo la pressatura i vini sono stati tenuti separati. La fermentazione malolattica si è svolta in botte e l'invecchiamento è avvenuto spontaneamente per il 30% in botti nuove e per il 70% in botti usate (1 anno) di rovere francese da 225 L e 500 L. Dopo 18 mesi di affinamento, durante i quali è stato effettuato un solo travaso subito dopo la malolattica, è stata costituita la partita finale ed imbottigliata il 25 giugno 2015, con sola leggera filtrazione e senza alcun tipo di chiarifica.

Frutta nera matura, un po' di tabacco fresco mescolato con note di cacao e il leggero tostato dell'invecchiamento in botte.
