Vinificazione del Vino Vallado Tinto Magnum: Circa l'80% delle uve proviene da vigneti piantati negli anni '90 e il 20% da vigneti vecchi con età tra 60 e 100 anni. Le uve sono vinificate in vasche di acciaio inox da 5 e 10 tonnellate di capacità, completamente diraspate. Il mosto fermenta per circa una settimana a 23º-25ºC con rimontaggio automatico programmato. Affinamento: circa il 70% del vino affina per 16 mesi in vasche di acciaio inox e il resto in barrique da 225 lt di rovere francese di 3º e 4º anno.
