Vinificazione: Tutte le uve sono raccolte a mano e provengono, per la maggior parte, dalla Quinta do Meco e da vigneti più vecchi nel Douro Superiore. All'arrivo in cantina, passano sul tavolo di selezione dove viene effettuata una rigorosa selezione. Successivamente, vengono diraspate, delicatamente schiacciate e trasferite in vasche di fermentazione in acciaio inox di forma tronco-conica, dove inizia la fermentazione alcolica con temperatura controllata. Durante il processo di fermentazione viene utilizzata la tecnica francese del "délestage" che, quando eseguita in vasche di forma tronco-conica, ha come obiettivo principale aumentare la superficie di contatto con le bucce nel momento in cui il mosto/vino viene versato sopra le masse (cappello). Come risultato si ottiene un vino concentrato e complesso, che rispetta l'eleganza ed evita la rusticità. Invecchiamento: Il Roquette & Cazes ha affinato in barrique di rovere francese, dove è rimasto circa 18 mesi. Un vino che esalta le tecniche di vinificazione di Bordeaux, in perfetta sintonia con l'identità del Douro.
