Quinta dos Carvalhais è il marchio di vini specializzato nella produzione dei migliori e più saporiti vini del Dão, costituendo il maggior riferimento nella regione - rappresenta l'arte, l'autenticità e la qualità dei migliori vini del Dão. In questo Quinta dos Carvalhais Reserva Branco si recuperano vecchie abitudini della regione riguardo all'affinamento dei vini bianchi, quando era comune la loro conservazione per lunghi periodi in vecchie botti di rovere. Le uve sono state ricevute in cantina in cassette da 20 Kg, scaricate direttamente nella pressa pneumatica. I mosti, debitamente protetti dall'ossidazione, sono stati sottoposti a decantazione statica a bassa temperatura per un periodo di 24 ore. Sono poi stati inviati a serbatoi in acciaio inox con temperatura controllata, dove è avvenuta la fermentazione, per circa 20 giorni, a temperature che non hanno superato i 16ºC. Affinamento di 16 mesi in barrique usate (20% 500 litri; 80% 225 litri).
