Vinificazione del Vino Cottas Reserva Branco 2017: Le uve sono raccolte manualmente e trasportate in cassette da 25 kg, selezionate, diraspate e pressate all'ingresso della cantina. Dopo una decantazione statica del mosto a bassa temperatura per un periodo di circa 24 ore, il mosto chiarificato viene inviato a vasche in acciaio inox dove si svolge l'avvio e la prima parte della fermentazione, momento in cui viene trasferito in botti di rovere francese dove termina la fermentazione alcolica e dove si effettua un periodo di "battonage" di circa 7 mesi sulle fecce totali.
