Il Moscatel Favaios 10 Anni è un vino da assemblaggio in cui per la sua composizione si utilizzano solo le migliori annate di Moscatel. Negli anni in cui la natura permette condizioni affinché il vitigno Moscatel si esprima in tutto il suo splendore, vengono effettuate alcune fermentazioni con una selezione accurata delle uve. La fermentazione dura circa tre giorni con intensa macerazione sulle bucce e con temperatura controllata a 15-16°C. L'acquavite di vino viene poi aggiunta alle uve e al mosto interrompendo la fermentazione in modo da ottenere un vino con elevato contenuto alcolico e zucchero residuo. La macerazione già in presenza di acquavite si mantiene per altri 5-6 giorni sempre a bassa temperatura. Dopo la pressatura il vino inizia un processo di invecchiamento in botti di legno per diversi anni, migliorando l'integrazione dell'acquavite con il vino e perfezionando il suo bouquet. Durante l'invecchiamento in legno vengono scelti i vini che costituiranno l'assemblaggio del Favaios 10 Anni, mescolando annate più vecchie con altre più giovani, rendendo il vino più ricco, intenso e complesso.
