Vinificazione del Vino Branco Biologico Quinta da Pedra Escrita 2021: raccolta manuale in piccole cassette forate da 15 kg, fermentazione con tecnologia a freddo, in ambiente riduttivo, con temperatura controllata di circa 16ºC. Le uve vengono pigiate senza pigiatura né diraspatura in atmosfera inerte per preservare tutto il potenziale aromatico delle uve. Viene fatto un grande sforzo per garantire che tutte le operazioni prefermentative siano eseguite con il massimo rigore, essendo responsabili della qualità intrinseca del futuro vino. Il vino intero fermenta in legno usato di rovere francese e vi rimane dopo un breve travaso sulle fecce fini con periodici batonage fino alla realizzazione della travasa finale a fine primavera. Fermentazione e affinamento per 6 mesi in legno di rovere francese con batonage fino imbottigliamento, al termine del quale affina in bottiglia per 4 mesi.
Bocca molto persistente e fresca con note di agrumi molto vivaci che si traducono in un insieme molto elegante, con un'acidità molto fresca e persistente
Aroma molto agrumato e minerale, note di pompelmo, discreti frutti esotici e fiori di campo complessati da una forte mineralità proveniente dal terreno esclusivamente granitico, con un fumo molto discreto
