Nella cantina José de Sousa si utilizzano ancora alcune tecniche ancestrali di vinificazione, la più emblematica è l'uso dell'intaglio nella fermentazione dell'uva. Gli elementi essenziali della vinificazione sono cambiati poco in più di duemila anni. In questo processo, le uve bianche vengono leggermente pigiate con i piedi e diraspate a mano su un tavolo di cernitura. La fermentazione avviene, senza raspi, in boccali con una capacità media di 1.600 litri ad una temperatura di circa 28ºC, controllata annaffiando i boccali 4 volte al giorno. La fermentazione dura circa 8 giorni, con il vino che rimane a contatto con la pasta fino a novembre. Affinamento in anfore per un periodo da 4 a 10 mesi a seconda dell'annata. Durante questo periodo viene posto un velo di olio d'oliva per prevenire l'ossidazione.
