L'origine dell'Aguardente Bagaceira Adamus risale a tempi lontani della storia del Portogallo, l'attuale e inadeguata immagine, meno nobile e disprezzata di una bevanda rustica e ricca di storia doveva essere restituita. Dopo 4 generazioni a produrre aguardenti bagaceiras tradizionali, è arrivato il momento di produrre anche una bagaceira che unisse il meglio di un aguardente tradizionale, con dettagli più modernisti, senza perdere l'anima di una pura bagaceira lusitana e specificamente della Bairrada. È stato selezionato il miglior vinacciolo d'uva proveniente dalla vinificazione dei migliori vini Baga della Bairrada, avendo seguito con cura tutto il processo di vinificazione e maturazione degli stessi. Sono state effettuate varie distillazioni, lente e dettagliate, in recipienti di rame, per trascinamento di vapore diretto, e sono stati selezionati i migliori distillati, sia in degustazione che analiticamente in laboratorio.
