A Mouchão vinifichiamo TUTTI i rossi in presse di pietra aperte. I grappoli interi, con raspo, vengono inclusi nel processo di macerazione, quindi il momento della raccolta è particolarmente critico, poiché è necessario trovare un delicato equilibrio tra zuccheri, acidi, maturazione fenolica complessiva (colore, tannini, ecc.) nonché lignificazione. dell'engaco. I grappoli interi, raccolti a mano, vengono trasportati in cassette da 20 kg in cantina, dove vengono pigiati con i piedi in presse e lasciati fermentare per circa 4-6 giorni. A metà inverno viene filtrato, dopodiché rimane in invecchiamento senza alcun intervento per circa 4 anni nei nostri tini di mogano e macacaúba. Dopo l'imbottigliamento matura nelle nostre cantine per altri 3 anni prima di essere messo in commercio tra le 12 e le 24 ore prima di essere imbottigliato. Al suo miglior potenziale entro il 2036.
