Nel Mouchão vinifichiamo TUTTI i vini rossi in tini di pietra aperti. Grappoli interi, con raspo, sono inclusi nel processo di macerazione, per cui il momento della raccolta è particolarmente critico, poiché è necessario trovare un delicato equilibrio tra zuccheri, acidi, maturazione fenolica globale (colore, tannini, ecc.) così come la lignificazione del raspo. I grappoli interi, raccolti a mano, sono trasportati in cassette da 20 kg alla cantina, dove vengono pigiati a piedi nei tini e lasciati fermentare per circa 4-6 giorni. Nel 2016 i tannini, il colore e la maturazione del raspo sono stati molto vicini alla perfezione. Questo vino giovane avrà la sua fermentazione malolattica in autunno, in grandi botti di legno (5.000 L). A metà inverno viene filtrato e poi rimane in affinamento senza alcun intervento per circa 4 anni nei famosi tini di mogano e macacaúba. Dopo l'imbottigliamento, affina nelle nostre cantine per altri 3 anni prima della sua uscita. Decantare o aprire tra le 12 e le 24 ore prima di servire. Al suo massimo potenziale fino al 2036.
