Le uve di Pinot Noir provengono dalla Quinta de Nápoles, da un appezzamento piantato all'inizio del millennio, che è in modalità di produzione biologica certificata dal 2018. La selezione delle uve viene effettuata in vigna per raccogliere i grappoli che si trovano in uno stato perfetto di maturazione e sanità, raccolti in cassette da 20 kg, e posti direttamente in vasca inox, grappolo intero, dove vengono pigiate a piedi e fermentano spontaneamente a temperatura controllata. Dopo la fermentazione alcolica in inox, la fermentazione malolattica avviene già in botte, dove ha affinato per circa 16 mesi.
