Dopo la prima e delicata pressatura, le uve hanno ancora dal 10 al 15% di succo. Abbiamo lasciato queste uve macerare per 7 giorni e poi le abbiamo pressate di nuovo per estrarre più succo, più concentrato. Questo succo è stato fermentato spontaneamente. Il risultato è sconcertante, indisciplinato, dirompente, perturbante... in un modo molto delizioso. Non è un film, è un vino. È la nostra Arancia Meccanica, poiché la vita a volte esercita una pressione angosciante che cerchiamo solo di sopportare. Qui, trasferiamo la pressione meccanica sulle bucce, che è un modo abbastanza sano di affrontarla.
