Le vecchie vigne della Quinta Vale D. Maria sono suddivise in parcelle diverse e ogni parcella viene raccolta a mano. Le uve sono selezionate prima di entrare nella cantina. Vengono diraspate e pigiate in tini per 1 a 3 giorni prima della fermentazione che avviene in tino e/o in vasche di acciaio inox. Nel tino, i vini vengono pigia a piedi ogni sera, nelle vasche di acciaio inox si effettuano rimontaggi manuali. I vini vengono travasati in botti nuove di rovere francese da 225 litri, provenienti da diverse bottaie (Seguin Moreau, François Fréres, Taransaud, Nadaliee Berthomieu), dove si svolge la fermentazione malolattica. Tutti i vini invecchiano poi per 21 mesi in botti di rovere francese (70% botti nuove e 30% botti di un anno), mantenendo i diversi lotti ottenuti da ogni fermentazione completamente separati fino alla composizione del lotto finale, circa un mese prima dell'imbottigliamento.
