Vinificazione del Vino Bairrada Filipa Pato Nossa Tinto: Dall'origine, dalla vigna alla bottiglia, la filosofia è creare un vino che rispetti l'espressione dell'uva baga senza trucco, senza artifici. Mantenendo tecniche ancestrali di vinificazione con minimo intervento. Il Nossa tinto ha origine da vigne vecchie di varie zone menzionate nella mappa. Il lavoro di viticoltura è manuale rispettando le tecniche tradizionali della regione, mantenendo la vegetazione naturale senza ricorso a erbicidi. Con una piccola percentuale di uva intera (circa il 10%), la vinificazione della baga è fatta in pigiadiraspatore di rovere ispirato al tempo dei romani. Riposa per 18 mesi in botti da 500 litri di rovere francese a grana fine, 80% usate e 20% nuove. Sono state imbottigliate 2500 bottiglie e 110 magnum nel 2011. Tutte sono sigillate manualmente con cera naturale per garantire un buon invecchiamento in cantina.
