VITICOLTURA E ENOLOGIA Le vigne sono impiantate su terrazze di due bardos. Tutte le uve del vino Xisto Roquette & Cazes sono state vendemmiate a mano e provengono esclusivamente dalla sotto-regione del Cima Corgo e dalla sotto-regione del Douro Superior. Tutte le uve sono state diraspate e trasferite in vasche di fermentazione in acciaio inox a forma tronco-conica, dove è iniziata la fermentazione alcolica a temperatura controllata. Durante il processo di fermentazione è stata utilizzata la tecnica francese del “délestage”, il cui principale obiettivo è aumentare la superficie di contatto pellicolare nel momento in cui il mosto/vino viene lisciviato sopra le masse (cappello). Come risultato, si ottiene un vino concentrato e complesso, che rispetta l'eleganza e sfugge alla rusticità.

Ha un attacco elegante, evolvendo in un vino con eccellente dimensione e struttura, composto da tannini freschi di texture fine. Un vino che è fatto con la tecnologia di Bordeaux ma che riflette l'identità del Douro. Finisce armonioso e con eccellente persistenza.
Presenta note di frutta fresca di bosco ben integrate con eleganti note di spezie e cisto.
