Per evidenziare il carattere del terroir, nasce questo vino da una vigna chiamata Vinha Formal. Situata su una piccola pendenza rivolta a Est, a Óis do Bairro, si trova nel cuore della mappa dei vini bianchi della Bairrada, così come delimitato da António Augusto Aguiar nel 1866, nella "Memória sobre os Processos de Vinificação". In questa vigna, la prima vendemmia per lo spumante viene effettuata tra metà e fine agosto, per ottenere alti livelli di acidità, ideale per lo spumante; la seconda vendemmia viene effettuata due settimane dopo, per la produzione di vino bianco.
