Il Favaios 1989 è il tipo di vino che si vinifica solo negli anni in cui le uve hanno dimostrato una qualità eccezionale. Dopo una selezione accurata delle migliori uve di Favaios, queste sono state macerate e fermentate come tradizionalmente nella regione. La fermentazione alcolica è molto breve, e subito dopo la salita del cappello si procede alla svinatura della maggior parte del mosto e all'aggiunta di acquavite. Una piccola parte del mosto continua però a fermentare e a macerare con le bucce per alcuni giorni ancora e solo più tardi si procede all'acquavite di questo mosto molto ricco aromaticamente. Il primo e il secondo mosto acquaviti sono poi miscelati e conservati in botti di legno molto vecchie e invecchiano lentamente migliorando il loro bouquet nel corso di decenni.EDIZIONE LIMITATA

Al palato il vino mostra la dolcezza tipica del Moscatel di Favaios molto ben equilibrata dall'acidità caratteristica dell'altopiano.
Presenta aromi caratteristici del vitigno come arancia e mandarino. È anche molto marcato dagli aromi di miele, uva passa, fichi secchi e caramello che gli conferiscono grande complessità
