"Fino alla fine degli anni '90, i vini del Dão venivano tradizionalmente affinati in serbatoi di cemento non rivestiti. Ho vinificato e imbottigliato molti di questi vini quando ho iniziato la mia carriera di giovane enologo. I serbatoi in acciaio inox e le botti erano un miraggio per l'80% dei produttori. Con questo ricordo ho preservato un serbatoio di cemento nella Quinta de Santa Maria a Cabanas de Viriato dove ho affinato questo vino per ricordare i vini del Dão di un tempo che ancora deliziano gli enofili esperti." di Carlos Lucas
