Quinta dos Carvalhais è il marchio vinicolo specializzato nella produzione dei migliori e più gustosi vini Dão, che costituisce il più grande riferimento nella regione: rappresenta l'arte, l'autenticità e la qualità dei migliori vini Dão. In questa Quinta dos Carvalhais Reserva Branco vengono recuperate le vecchie abitudini della regione riguardo all'invecchiamento dei vini bianchi, quando era comune conservarli per lunghi periodi in vecchie botti di rovere. Le uve venivano ricevute in cantina in cassette da 20 kg scaricato direttamente nella pressa pneumatica. I mosti, opportunamente protetti dall'ossidazione, sono stati sottoposti a decantazione statica a bassa temperatura per un periodo di 24 ore. Sono stati poi inviati in vasche di acciaio inox a temperatura controllata, dove la fermentazione è avvenuta per circa 20 giorni, a temperature che non superavano i 16ºC. Invecchiato per 16 mesi in botti usate (20% 500 litri; 80% 225 litri).
Giallo citrino con sfumature verdastre
Bocca con molto volume, intensa nella struttura e ferma nella presenza. Acidità molto integrata che fornisce freschezza gastronomica. Finale lungo e molto equilibrato
Note di pera Williams, sentori di scorza di frutta secca e un'atmosfera dolce derivante dall'invecchiamento in botte
