A Quinta da Boavista, per garantire la conservazione delle caratteristiche del vitigno e il controllo totale del processo produttivo, ricorriamo alla raccolta manuale e alla selezione manuale dei grappoli, seguita dalla diraspatura e dalla pigiatura soffice degli acini che abbiamo come serbatoi di fermentazione i tradizionali lagares in granito con calpestio a piedi, tini di fermentazione in acciaio inox e, per piccoli lotti, contenitori in PVC alimentare o fermentazione in botti nuove di legno francese da 500 litri. Ognuno di questi tipi di fermentazione conferisce al vino uno stile particolare. Come filosofia enologica ne abbiamo una sola: estrarre delicatamente le migliori caratteristiche delle nostre uve. I monovarietali sono gli unici vini che invecchiano in botti da 500 litri. Dopo un periodo di affinamento, che varia tra i 15 ed i 20 mesi, avviene l'imbottigliamento. Tutti i vini sono sigillati con sughero naturale. Non essendo filtrati né stabilizzati dal freddo, possono dare origine ad un precipitato con l'invecchiamento.

In bocca rivela vigore e complessità, tannini maturi e una struttura elegante, fresca e sovrana. Un vino potente e intenso che svela i suoi misteri durante tutta la degustazione.
