Viticultura: Um terroir único no mundo, no meio do oceano Atlântico, na base da montanha vulcânica do Pico, as vinhas estão plantadas nas fendas da rocha, junto ao mar, onde se ouve o “cantar do caranguejo”, pois é aqui que há mais sol e calor. Uma proximidade de, por vezes, escassos metros que obriga à proteção da vinha por muros (currais), dos ventos fortes e salinos do Atlântico. Vinificação do Arinto dos Açores de António Maçanita: Vindima manual seletiva em cestos de 20Kg, prensagem de cacho inteiro, transfega após 12h para cubas de fermentação horizontais de 600-1000L. Estágio: 10 meses sobre borra fina.
