Vinificazione del Vino di Porto Quinta Vale Dona Maria Riserva: Le uve vengono pigiate a piedi, prima della fermentazione, con l'incorporazione del 15% del totale di acquavite da aggiungere. Questo permette una macerazione delle uve a temperature più basse e per un periodo di tempo più lungo prima della fermentazione. Quando il mosto è pronto per la fortificazione, questa viene effettuata in un'unica volta, aggiungendo l'acquavite al mosto e alle bucce nel tino. Una nuova pigiatura assicura una buona omogeneizzazione e l'arresto completo della fermentazione. Il mosto e l'acquavite rimangono nel tino per altri due-quattro giorni, con una pigiatura molto leggera di 10 minuti due volte al giorno. Viene trasferito nelle botti insieme alle presse. I vini invecchiano in botti molto antiche (oltre 100 anni) di rovere e castagno, e in piccole vasche di acciaio inox fino al mese precedente all'imbottigliamento.
