Vinificazione del Calcario 3 del Principal Tinto: Vendemmia manuale con selezione su nastro di cernita all'ingresso della cantina. Segue la diraspatura e la pigiatura, con il risultato trasferito in vasche di inox a temperatura controllata per la fermentazione alcolica e malolattica. Macerazione per circa 20 giorni, utilizzando la tecnica delestage. Il vino affina da 24 a 30 mesi in botti usate di rovere francese da 225 litri. Affina ulteriori 6 anni in bottiglia prima di essere immesso sul mercato.
