Vinificazione del Vino Covela Reserva Branco 2016: Vendemmia manuale, organizzata per parcelle di vigneto per garantire la raccolta al momento giusto. Trasporto delle uve in piccole cassette per evitare la schiacciatura. Selezione manuale dei grappoli. Macerazione a freddo delle bucce. Diraspatura totale seguita da una leggera pressatura. Fermentazione spontanea in botti di rovere provenienti dalle foreste austriache e francesi. Affinamento sulle fecce totali, con bâtonnage periodico. Senza stabilizzazione né filtrazione.
