Quinta dos Carvalhais Colheita Branco è un vino bianco Dão di eccezionale qualità, massimo esponente di eleganza e ricchezza. Erede di antiche conoscenze, Quinta dos Carvalhais unisce esperienza e innovazione per creare vini molto eleganti, dai sapori intensamente delicati e dalla personalità unica della regione. Gouveio ed Encruzado sono stati raccolti separatamente. L'uva è stata scaricata da cassette da 20 kg direttamente nella diraspapigiatrice. Dopo la pressatura, il mosto è stato sottoposto a decantazione statica, quindi è stato posto in vasche di acciaio inox, dove sono stati aggiunti lieviti indigeni. Una parte del 10% di mosto Encruzado ha fermentato in botti di rovere francese usate, mentre il resto è rimasto nella vasca di acciaio inox. Gouveio ha fermentato in vasche di acciaio inox. La fermentazione è avvenuta a 18ºC, per un periodo di circa 20 giorni. Di questo vino, il 10% di Encruzado ha fermentato e invecchiato per circa 6 mesi in botti di rovere francese usate da 225 litri. La restante parte della partita (90%) ha fermentato e affinato in vasche di acciaio inox. Il matrimonio del vino in botte con quello in tino ha contribuito a raggiungere un maggiore equilibrio nel blend finale tra il vino e le componenti aromatiche tipiche del legno.
