Le uve sono state raccolte a mano al punto di perfetta maturazione in cassette da 20 kg, poi trasportate ad Adega Reserva Quinta do Sol All'arrivo in cantina, i grappoli vengono sottoposti ad una prima cernita manuale, seguita da una delicata diraspatura, dopodiché gli acini. vengono selezionati prima di essere immessi per gravità nei piccoli serbatoi di fermentazione. La frantumazione avviene solo durante l'ingresso per gravità nel serbatoio, evitando così ossidazioni indesiderate. Le fermentazioni vengono monitorate e adeguate per ottenere il meglio da ciascun vitigno. Segue una macerazione post-fermentativa per estrarre i tannini dai vinaccioli, che si integrano con quelli ottenuti dalle bucce, favorendo così lo sviluppo di un palato più ampio e aumentando il potenziale di invecchiamento del vino.
