VINIFICAZIONE: La fermentazione avviene in vasche di acciaio inox, dove l'uva macera ed è agitata con le sue bucce, a temperature tra 16-18ºC, per produrre un vino bianco con colore e struttura che possa sostenere un invecchiamento prolungato in rovere. La fermentazione è interrotta dall'aggiunta di acquavite di vino, creando il vino fortificato. Un vino di alta qualità, fatto da una singola vendemmia. Un vino di Vendemmia invecchia in botti di rovere per periodi di tempo che possono variare, ma mai meno di 7 anni. Viene quindi imbottigliato e venduto secondo le esigenze del mercato.
