La vendemmia dell'Íncola è una vendemmia di carattere veramente chirurgico, dove vengono raccolte a mano solo le uve che si trovano ai livelli perfetti di maturazione per il profilo di questo vino. Arrivando in cantina, le uve passano su un nastro di selezione manuale dove vengono rimossi i grappoli che non si trovano in perfette condizioni di maturazione e sanità - nonostante la selezione effettuata in vigna, questa seconda selezione permette di identificare grappoli indesiderati che potrebbero sfuggire alla prima mano. Dopo la selezione, le uve vengono indirizzate verso piccoli botti di rovere francese in cui l'80% dei grappoli rimane intero e con raspo, mentre il 20% viene diraspato e pigiato. Inizia la fermentazione alcolica del mosto e durante questo processo viene effettuato un leggero "pisage" e tutte le rimontaggi vengono fatte a secchio. L'obiettivo sarà sempre quello di cercare l'eleganza e la finezza, evitando un'estrazione eccessiva. La fermentazione malolattica e l'affinamento avvengono in botti (500 L) e tino di rovere francese usati per un periodo di 18 mesi fino all'imbottigliamento che avviene senza filtrazione.

I sapori si incontrano con il profilo aromatico, con un eccellente attacco in bocca che svela gradualmente sfumature e strati di sapori in modo molto fine, essendo sempre contraddistinto dal suo tannino fresco e vibrante.
Al naso, si presenta molto complesso e misterioso, con l'intensità e la profondità tipiche di un vino proveniente da vigne molto vecchie, ma d'altra parte con un profilo aromatico fresco, erbaceo e selvaggio. Emergono sfumature di fiori, cactus e erbe di montagna, unite a belle, ma delicate, note di frutta rossa, frutta nera e suggerimenti terrosi.
