Per evidenziare il carattere del terroir, questo vino proviene da un vigneto chiamato Vinha Formal. Situato su un piccolo pendio esposto a est, a Óis do Bairro, si trova nel cuore della mappa dei vini bianchi di Bairrada, come delimitata da António Augusto Aguiar nel 1866, nella "Memória sobre os Processos de Vinificação". In questo vigneto la prima vendemmia per lo spumante viene effettuata tra metà e fine agosto, per ottenere livelli di acidità elevati, ideali per lo spumante; la seconda vendemmia viene effettuata due settimane dopo, per la produzione di vino bianco.Vinificazione dello Spumante Luis Pato Vinha Formal Brut 2011:Fermentazione: Botti di rovere di Allier usate / 5001 + 6501/1 mese
