Quinta dos Carvalhais Colheita è un vino rosso Dão di eccezionale qualità, massimo esponente di eleganza e ricchezza. Erede di antichi saperi, Quinta dos Carvalhais unisce esperienza e innovazione per creare vini molto eleganti, dai sapori intensamente delicati e dalla personalità unica della regione. Le uve sono state raccolte per varietà e appezzamento, con una rigorosa selezione qualitativa delle stesse. Dopo la diraspatura e la pressatura soffice, le uve passano, per gravità, in piccoli tini di acciaio inox a temperatura controllata, dove vengono vinificate vitigno per vitigno. La fermentazione alcolica si è svolta per circa 8 giorni, ad una temperatura media di circa 27ºC, con il Touriga Nacional rimasto in macerazione post-fermentativa per altri 10 giorni. Questo vino è maturato in botti usate di rovere francese per un periodo di 12 mesi. Il blend finale è stato preparato sulla base della selezione qualitativa di numerose degustazioni e analisi effettuate in questo periodo, che hanno permesso di scegliere, vitigno per vitigno, i migliori vini. Il vino ha subito una leggera chiarifica e filtrazione prima dell'imbottigliamento ed è stato imbottigliato senza trattamenti di stabilizzazione a freddo, che possono causare la formazione di depositi durante l'affinamento in bottiglia.
