Quando finisce la vendemmia nel Dão, rimangono solo le uve che daranno origine a questo Colheita Tardia. È il tempo del sole autunnale, delle prime piogge e dell'umidità, delle foglie che, a Santar, assumono colori e motivi così contrastanti. Solo negli anni migliori riusciamo a produrre questo vino, che chiamiamo Outono de Santar, perché ci riporta sempre alla memoria la magia unica di quel periodo dell'anno nell'emblematica Vila de Santar. Vinificazione del Vinho Outono de Santar Late Harvest 2013: Diraspatura totale, pressatura pneumatica delicata con utilizzo del 20% del succo d'uva, chiarificazione statica naturale, fermentazione alcolica in botti di "secondo uso" a 20°C. Affinamento: 6 mesi di batonnage con 12 mesi in botte di secondo uso.
