Vinificazione del Vino Castello D Alba Reserva Tinto 2021 da 3 Litri: Vendemmia manuale, ricezione con diraspatura totale e immediata pigiatura, le uve sono fermentate per varietà e per lotti, in modo da poter effettuare fin da subito una rigorosa selezione che darà poi origine al “blend”, molto tradizionale del vecchio mondo, rivela l'arte di selezionare uve per parcelle e l'arte di selezionare vini per poi assemblare. La fermentazione avviene in vasche inox di piccola capacità, con temperature intorno ai 28 ºC. Macerazioni dolci e controllate per ottenere vini eleganti e aromatici. Affinamento: Parte del lotto affina per un periodo di 12 mesi in legno di rovere francese prevalentemente, con una piccola percentuale di legno americano.
