Vinificazione: Tutte le uve vengono raccolte manualmente e provengono, per la maggior parte, da Quinta do Meco e dai vigneti più vecchi del Douro Superior. All'arrivo in cantina passano davanti al tavolo di selezione dove viene effettuata una rigorosa selezione. Successivamente vengono diraspate, pigiate delicatamente e trasferite in tini di fermentazione troncoconici di acciaio inox, dove iniziano la fermentazione alcolica a temperatura controllata. Durante il processo di fermentazione viene utilizzata la tecnica francese del "délestage" che, se effettuata in tini di forma troncoconica, ha l'obiettivo principale di aumentare la superficie di contatto con le bucce nel momento del dilavamento del mosto/vino sulle masse (cappello ). Si ottiene così un vino concentrato e complesso, che rispetta l'eleganza ed evita la rusticità.Invecchiamento:Roquette & Cazes invecchiato in botti di rovere francese, dove rimane per circa 18 mesiUn vino che mette in risalto le tecniche enologiche bordolesi, in perfetta armonia con l'identità del Douro.
